What is
confit?

Confit, from the verb “confire” in french, is an old traditional preservation technique used in countrysides to keep meat available during the whole winter.

Once a preservation technique, now a luxurious gourmet food, duck confit melts on the tongue and reveals a true depth of flavors.

In a nutshell, confit consists of slow-cooking meat in its own fat until rich and tender. Usually stacked it in big clay jars, it allowed farmers to keep their meat without the need of refrigeration.
